Die Familie hat ein historisches Rezept aus dem Mittelalter wieder aufleben lassen. Er war der Lieblingssenf von Papst Clemens VI. Seitdem auch liebevoll Senf der Ppste genannt, weil diese Senfflecken nicht auf den violetten Roben der Ppste auffielen. Es ist ein sehr feiner, milder Senf, der mit Traubenmost hergestellt wird und der mehr an eine delikate Sauce
